Most ordinary cows produce milk which contains the A1 beta casein protein, along with A2 protein. A2 milk which contains only the A2 beta casein protein and is significantly healthier, has become increasingly rare. Earliest milk variants with the A1 mutation is traced back to European cows. And it is said that it is the cross-breeding of cows that led to the decline of cows producing pure A2 milk. This rare A2 milk can now be found being naturally produced, in some of India’s native desi cows… in particular the Gir Cow.
